I think it’s fair to say Texas has more variations in its barbecue styles than any other state. And more disagreements about them.
When you’re driving around, dont forget to keep your eyes open. You never know when you might happen upon a shade-tree barbecue stand or a little shack that nobody’s ever heard of — with the best smoked meat in creation.
There’s not much point in complaining about high-tech barbecue. It serves a purpose, and it’s here to stay. And no doubt the quality of it will keep on improving. But as the old barbecue joints slowly disappear, each one that remains becomes a bigger treasure.
You can put all of the sauce on it you want, but you still have to master the art of cooking barbecue.

Though the years, here’s what I’ve learned: Barbecue soothes the soul. It’s simple in philosophy and rich in tradition. It’s an art and a craft, a love and a passion.
Life is too short for a half-rack.
Just like Moses and his people wandered the desert, I’ve been traveling the back roads of this country on my own journey to the Barbecue Promised Land. I’d have taken better notes had I known I’d be writing a book.
