  • Sausage: Good raw materials; casing, texture, flavor, etc., but no value added from cooking.
  • Beans: Pintos: Flat and a bit

    • Beans: Pintos: Flat and a bit soft.
    • Spare Rib: Heavy brown sugar rub. Tasty, but not smoked.
    • Pork Loin: Brown sugar rub. Sweet, moist, firm, and very nice. Could be smokier – almost baked.
    • Brisket: Firm, good ring, medium bark. A bit dry and tough. Serviceable.
    • Atmosphere: Good scorching asphalt. Nice interior – a little restauranty, but many dead animals and good use of corroded and galvanized steel.
