  • Potato Salad: Good. Eggy with light mustard
  • Coleslaw: Tangy – almost straight vinegar. Very thin sauce. Good cut – could be chunkier vs. stringy
  • Sauce: WOW. Very complex and balanced. Spicy with great hang time.

    • Spare Rib: Sticks to bone. Strange rub – grainy but patchy. Lots of pepper. Like sand & water
    • Sausage: Pretty good. Medium texture, but mild taste
    • Brisket: Firm yet tender. Crosscut. Great bark. Super smoke flavor
    • Atmosphere: It is hotter than hell in the parking lot (asphalt), especially after an hour with 2-60 A/C in Salamander’s expedition. Nice and cool inside. Joint is very nice. Tin ceilings, trees inside, low, brick red paint. Very old gas pump and many dead animals. Big without feeling too big
    • Beans: Pintos: Good. Skin a bit tough, but meat is too soft. Mild
