Main Fare: Brisket is good.  The thin slices dry out fast.  Slices are salty all the way through, and this works to bring out the beef flavor.  Brined? Rib is very good.  Not too fatty… well rendered.  Also salty all the way through the meat.  Brined?

Main Fare: Brisket is rendered and moist… but still tough on the chew.  Is this an issue with reheating? Rib is big and meaty.  Tasty.  Light coating of rub is salty & spicy. Sausage is another with the homeade bologna or salami flavor profile with black pepper. Jalapeno Cheese sausage is quite chewy.

Main Fare: Brisket is stand-up style, with a nice spice in the rub. Some bitterness in the meat. Sausage has a good meaty flavor – like homeade bologna or salami. Creosote. Rib’s black coating = creosote. Sweet glaze helps to cut the bitterness.
