  • Carters CrewAtmosphere: Pit in the center of the serving area; No a/c or ventilation, so inside is filled with hickory smoke… The serving line seemed slow, but we were handsomely rewarded for our patience! Drive thru seems to be a majority of their business.

    • Chopped: They were out of sliced brisket, so we settled for Chopped. Velvet texture… very fatty but also very flavorful. Mmmm – more greasy goodness.
    • Boudin: Good flavor – can detect some smoke in the finish. Loose; falls apart easily; heavy rice content.
    • Sides: Beans – decent, fairly standard. PS – different… good, but not outstanding… It does stand out as being different, though.
    • Atmosphere: Out of slaw; out of sliced beef, and we got the last bit of chopped. Could be the best place of the day… Of course, I said the same thing after Country Tavern, too! We’re taking a couple of ‘to-go’ boxes for T-Bone in Sheveport.
    • Sausage: Spicy, greasy. Loose texture… something different, but we’re having trouble putting our finger on it. Maybe curry powder??? Ugh – don’t try it with the sauce, there’s a major culture clash going on there.
    • Spare Rib: Greasy, fall-off-the bone goodness! Messy, but its so good that you don’t even care.
