  • Sausage: Regular sausage is similar to the jalapeno, but without the spice.
  • Sausage: Jalapeno sausage – Medium grind and medium packed. Sweet on the start and spicy on the finish. The spice is not overpowering… very good.

    • Spare Rib: Sweet rub. Good meat pulls off the bone with a tug. Smoke not as noticeable as in the brisket. Second rib was jerky.
    • Brisket: Long-grained. Pulls apart with a little tug. Very smokey, but a bit chewy.
    • Atmosphere: Right on 290, and right next to a small airfield. Has a down-home feel, complete with a kids playground. Roadside BBQ – on a larger scale.
    • Sides: PS and CS are standard fare.
    • Sauce: Sweet, tomato-based with a little spice on the finish.
    • Pork: Very tender, even if its a touch dry. Good pork flavor… smoke not as noticeable.
