  • Atmosphere: On the main drag into Texas City. Maybe a former seafood house? Mesquite wood stacked up outside. Shiplap style wooden interior.
  • Sauce: Ketchup, brown sugar, and liquid smoke. Your basic ketchup-based bbq sauce.

    • Spare Rib: Good rib. Oh yeah. Again, the rub is very quiet… but this rib doesn’t need any help. Its falling off the bone, and the fat is nicely melted into the meat.
    • Sausage: Course ground black pepper. The casing is a bit tough. Medium-course ground sausage is medium packed. A bit greasy, but good flavor.
    • Brisket: Mesquite smoked brisket in the stand-up style. Lean & slightly marbled. Rub doesn’t do much for me – kinda bland… but the meat doesn’t need too much help. Good meat/smoke balance. Its a bit chewy on the finish.
    • Atmosphere: PS is creamy with dill – good. Beans are beefy and little firm, but not crunchy. CS is good. Spanish rice seems packaged.
