  • Spare Rib: Full spare, with loads of pecan-smoke flavor. Sweet rub with plenty of black pepper on the finish. Smoke flavor is too strong… tasting some creosote here. Very good rib, except for the smoke ‘tang’.

  • Dessert: Pecan pie

    • Dessert: Pecan pie: OUTSTANDING!

    • Beans: Standard pintos

    • Potato Salad: Mustard based. Good dill pickle flavor.

    • Coleslaw: Crispy chunk leaf; good.

    • Hot Link: Good link with a delayed-action spice that stays and stays.

    • Sausage: Mmm; Pecan smoke is GOOD on the sausage!

    • Brisket: Chunks of brisket; Moist & Tender. Good meat/smoke balance, but all of the bark has been trimmed off… darn.

    • Atmosphere: The Duke; sawdust & picnic tables; good pits; friendly service
