    • Bologna: Has a ‘twang’; its great with the sauce!

    • Sausage: Like store-bought, but pecan does nice things…

    • Spare Rib: I’m diggin’ this rib! Good spicy rub with black pepper. Pecan wood really give the rib a different flavor.

    • Sauce: Sweet sauce; has a velvet texture (like Railhead).

    • Atmosphere: Good people here. They stayed open late, just for us. Letty, our server, is a UT student home for summer… Hook ‘Em! Picnic tables inside; sawdust on the floor was temporarily gone, but will be back. Full-size posters of both John Wayne and Clint Eastwood. Great table service! Old place burned down.

    • Brisket: Mmmmmm. Good texture; nice crust on the exterior. I keep coming back for more. This is really good… a tad dry maybe, but we got here late (after 8pm).
