ssweeney’s Review of Thompsons Barbecue
Main Fare:
- Brisket is a lean slice of stand-up style brisket. Smells bitter to my nose, but tastes clean. No rub?
- Ribs were mixed on our platter. Mine was an end rib that was chewy like jerky. Doug’s was "like butter"… fully rendered and tasty. Plain salt & pepper rub here.
- This is a sausage of many flavors. Complex spice blend with sage in the mix. Has a good deal of heat on the finish.
- Pork butt was also "like butter". Melts in you mouth. Pork was cut into bite sized chunks and then cooked further to fully render the meat. Excellent.

Other Fare:
- Slaw has a good crunch and contains nice veggies and a good dose of black pepper.
- Twice baked potato casserole was good.
- Baked beans out of a can?
- Pintos were spiced with jalapeno and sported plenty of heat.
- The peach cobbler was INTENSE. Spices were rich and bold… outstanding! Texture was too mushy.
Atmosphere:
- Newer building across the street from Walmart on the East Loop.
- Southern Pride smoker.
- Lots of bikers here today… in fact, they kinda take over the place.
- Kids raising money for their pee-wee football team ask us if we’ve visted Smitty’s.
