  • Veal: Very tender – fat has great flavor. Nice treat.

  • Hot Link: Classic. Very greasy and crumbling. Moderate spice and chewey casing.

  • Potato Salad: Awesome, complex flavor. A coarser chop would make this perfect.

    • Sauce: Ass. This is why we separate for the tour.

    • Spare Rib: Good bark, perfect pull, well smoked. Just a little bit chewey, but I inhaled the whole think at once.

    • Atmosphere: Green interior, circa 1946. Nice tunes on ‘200 Selection Stereo’ jukebox. Bar filled with locals. No Pest Strip over door.

    • Sauce: HOT

    • Pork: More subtle flavor than the veal. Weaker rub, but melts in your mouth.

    • Beans: Great. A tad soft, but super flavor.

    • Brisket: Good bark, ring, and rub, but a bit chewey.
